SAVORY ALMONDS AND PEPITAS.
























I wanted some spiced nuts the other day, and found that we had almonds and pumpkin seeds in the fridge. I decided to make a little batch of savory spiced nuts using the spices that I had on hand here.  They were good, so I thought I'd share my recipe with you.


Savory Spiced Almonds and Pepitas

Ingredients

1 cup Almonds
1/2 cup Pumpkin seeds (pepitas)
Olive Oil
Sea Salt
Pepper
Curry Powder
Cumin
Garlic Powder

Method

Roast the almonds and pepitas on a cookie sheet in a 350 degree oven for about ten minutes.  Take them out and let them cool for a few minutes.

Mix the spices in a bowl.  I used about 1 teaspoon of sea salt and a 1/4 teaspoon of pepper, and 1/2 teaspoon of the garlic powder, curry and cumin.

Heat about one tablespoon of olive oil in a large pan.  Add nuts and stir to coat.  Once coated, spoon into the bowl with the spices and toss until they are all covered.  Spread on a cookie sheet to cool.

This method would work with just about any nuts, and any spices.  You could even go sweet if you wanted to, with some sugar, cinnamon and sea salt and almonds.  Lots of possibilities!
