Well, this weekend we had a surprise...our stove decided to break. :( The glass top cracked...boo. We've decided to get a new stove, it is pretty costly to replace the glass top, and that was really not my favorite feature on that stove, there's a lot of cleaning involved, if anything boils over, it's a mess. Not having a working stove and oven has been interesting...if there was ever a family that really needs to have a working stove, it's us. We cook everything from scratch. SO, we are without a stove until Wednesday, when the new, non-glass topped stove arrives.
Therefore, the microwave, toaster and crock pot are getting a workout right now. I needed a sweet treat, and was so sad that I couldn't bake anything, so I made this simple dark chocolate coconut bark. Like a Mounds Bar, but healthier. :) (Sort of...at least there isn't any high fructose corn syrup or other artificial stuff in this).

You need just two ingredients...dark chocolate and dried coconut. I got both from Trader Joe's. I love their coconut chips, they are good on their own, and the large size looks really pretty on this bark.
Break your chocolate into pieces and melt in the microwave. I used about 2/3 of the bar, and microwaved it for 45 seconds, and then in 15 second intervals until it was melted and smooth. Stir in between to make sure it's fully melted.

Spread on a waxed paper lined plate, and top with coconut. Press the coconut down lightly.

Pop in the freezer for about 30 minutes.

Once hardened, break up into pieces.

Enjoy! Store in the refrigerator in an air tight container.

ReplyDeleteBummer on your stove - but yay for a new one!! I've never had a glass topped one, but can imagine they'd be a pain to keep clean. I'd love a new stove (a pro one is on my wish list) but until I win the lottery, don't think that'll be happening anytime soon.
